Napa Lost 85% of Its Vineyards Once. It Never Stopped Rebuilding the Soil From Scratch.
By February 1890, a root louse called phylloxera had reached Napa Valley, and by 1900 the region's vineyard acreage had collapsed from more than 20,000 acres to roughly 3,000 -- an 85% loss. The fix wasn't a chemical, it was a graft: European vinifera vines grown on resistant American rootstock, so the fruit stayed French in character while the roots underneath were immune. Start with the number most tourists standing in a mustard-covered vineyard in February have no idea is connected to what they're looking at. Phylloxera, a nearly microscopic root louse, reached Napa Valley by February 13, 1890.[1] It fed on vine roots underground, invisibly, until the vine simply died. Napa had more than 20,000 acres of vineyards before the epidemic; by 1900, roughly 3,000 acres survived -- an 85% collapse in a decade, and fewer than half of everything planted in California in the 1800s made it into the 1900s at all.[1]

The fix that actually worked wasn't a poison. It was a graft. Growers tried grafting European vinifera vines onto hybrid rootstocks first; the early hybrids still carried enough vinifera parentage to eventually succumb the same way.[1] What held was grafting the desired vinifera fruit onto the root system of a North American grape species outright -- the fruit above ground stayed exactly what a winemaker wanted, while the roots below ground were a different species entirely, one phylloxera couldn't kill.[1] Almost every vine in Napa today still grows this way: a graft line visible near the base of the trunk, marking where the fruit-bearing wood meets rootstock from a different plant altogether.

That same protect-and-rebuild logic now runs every year, not once a century. Grapevines pull hard on soil nitrogen and organic matter over a growing season, and by harvest the ground between the rows is genuinely depleted. Starting in late October, right after the last grapes come in, growers plant mustard along with legumes and grasses in rotation between the vine rows.[2] Mustard's taproot runs deep enough to break up Napa's heavy clay soil, and the plant itself contains glucosinolates -- natural compounds that suppress the same nematodes phylloxera's modern relatives still threaten vines with.[2] Legumes planted in rotation with it fix nitrogen directly from the air through their own root bacteria, restocking exactly what the vines spent the season pulling out. By late winter the mustard blooms into the solid yellow hillsides Napa is now nearly as famous for as the wine itself -- then, before spring bud break, all of it gets tilled back into the ground as green manure, the entire crop returned to the soil that grew it.[2]

On May 24, 1976, British wine merchant Steven Spurrier organized a blind tasting in Paris, pitting top-tier French Chardonnays and Bordeaux reds against California challengers, judged entirely by French experts who had no idea which glass held which wine.[3] Napa wine took first place in both categories -- Chateau Montelena's 1973 Chardonnay, Stag's Leap Wine Cellars' 1973 Cabernet Sauvignon -- against judges who had spent their careers assuming French wine was simply better by definition.[3] It became known as the Judgment of Paris, and wine historians still call it the single most consequential competitive event in American wine history: the moment the global hierarchy the French had held since before Napa was even Napa permanently cracked.[3]

None of it was inevitable, and none of it was a single fix. A grafting technique saved the vines that would otherwise have died out entirely. A cover crop planted every October keeps the soil underneath them from repeating the depletion that made the region vulnerable in the first place. Both are the same instinct, operating on two different timescales -- one emergency response in the 1890s, one routine maintenance every winter since -- and neither one shows up in a tasting note.
